Blackfish Restaurant is the
culinary masterpiece of Charles “Chip” Roman,
owner of Charles Roman Catering and student of Mark Vetri
and Georges Perrier.
Working his way around a kitchen since the early age of
three, Chip’s love of the culinary arts grew steadily
as he amassed an impressive array of education and professional
experience.
In 2004, Chip began his own catering company, Charles
Roman Catering, where he continues to offer a superior
culinary experience complete with the personal touches
that define a successful private event. The venture
has met with great success and Charles Roman Catering has
organized receptions, galas, and dinners for a number of
local dignitaries and institutions ranging from Abington
Friends School to Pepper Hamilton LLP. The demand
for Chip’s catering services inspired the opening
of Blackfish.
Located on Conshohocken’s Fayette Street, Blackfish
combines a relaxed intimate atmosphere with Chip’s
personal passion for fresh ingredients and innovative flavors.
The restaurant continues to win critical acclaim with cuisine
that is defined as seafood-centered, progressive American
cuisine with French influences. Blackfish was named
the “Number Three Restaurant in Philadelphia” by Philadelphia
Magazine, as well as “Best New Restaurant in
the Suburbs” and “Best New BYOB” by Mainline
Life. It also received “three bells” from
the acclaimed restaurant critic Craig Leban of the Philadelphia
Inquirer. Chip himself has been recognized as
a “Rising Star” by Gastonome magazine
and has recently been nominated for the “Rising Star
Chef” award by the James Beard Association.
In addition to owning and operating Charles Roman Catering
and Blackfish, Chip teaches Culinary Arts courses at Drexel
University, including a class with Georges Perrier. Chip
lives in Conshohocken, Pennsylvania with his wife Amanda,
and his two children, Charlie and Caroline. He enjoys
fishing as often as possible. |
